Ingredients
- 4 veal cutlets (about 150g each)
- 100g all-purpose flour
- 2 eggs, beaten
- 150g bread crumbs
- 100g butter or clarified butter
- 1 lemon, cut into wedges
- Salt and pepper to taste
- Paprika (optional)

Prepare three shallow bowls: one with flour, one with beaten eggs, one with seasoned breadcrumbs

Rinse veal cutlets and pat dry with paper towels

Place cutlets on a cutting board and pound with a meat mallet to 0.5cm thickness

Season both sides of the veal with salt and pepper

Dredge each cutlet in flour, then dip in egg, then coat with breadcrumbs

Melt butter in a deep pan over medium heat, being careful not to let it brown

Fry cutlets until golden brown on first side
