Ingredients

  • 400g instant couscous
  • 500ml hot vegetable stock
  • 2 carrots, chunked
  • 2 zucchini, chunked
  • 1 turnip, cubed
  • 1 sweet potato, cubed
  • 1 onion, chopped
  • 1 can (400g) chickpeas, drained
  • 400g canned tomatoes
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • Pinch of saffron
  • 3 tbsp olive oil
  • Bunch parsley and cilantro

    Heat olive oil and sauté onion for 5 minutes.
