Ingredients
- 400g basmati rice
- 2 onions, thinly sliced
- 200g mixed vegetables (carrot, beans, peas, cauliflower)
- 200g potatoes, cubed
- 200g plain yogurt
- 3 tbsp ginger-garlic paste
- 2 tomatoes, chopped
- 2 tsp biryani masala
- 1 tsp turmeric
- 1 tsp chilli powder
- Pinch of saffron in 3 tbsp warm milk
- Handful of mint leaves
- Handful of cilantro
- 4 tbsp ghee
- 1 cinnamon stick, 4 cloves, 4 cardamom pods

Soak rice in water for 30 minutes.

Fry onions in ghee until deep brown and crisp, set aside.

In the same pan sauté ginger-garlic paste, then add tomatoes, vegetables and spices, cook 8 minutes.

Boil rice in salted water with whole spices for 6 minutes until 70 percent cooked, drain.

Layer half the rice over the vegetables, top with fried onions, mint, cilantro, then remaining rice.

Drizzle saffron milk over, cover tightly and steam on low for 20 minutes.
