Ingredients

  • 1.5 kg pork trotters and bones
  • 500g pork belly
  • 2 tbsp miso paste
  • 3 tbsp soy sauce
  • 1 tbsp mirin
  • 4 portions fresh ramen noodles
  • 4 eggs
  • 4 spring onions, sliced
  • 1 sheet nori, halved
  • 100g bamboo shoots
  • 4 cloves garlic

Instructions

    Boil pork bones for 10 minutes, drain and rinse to remove impurities.

    Cover bones with fresh water and simmer hard for 4 hours, topping up water as needed.

    Meanwhile braise pork belly in soy, mirin and a little water for 1 hour, then slice.

    Soft-boil eggs for 6.5 minutes, cool and peel.

    Strain the broth and stir in miso and remaining soy sauce.
