Ingredients

  • 1.2 kg ripe tomatoes, halved (or 2 cans 800g whole tomatoes)
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tbsp tomato paste
  • 500ml vegetable stock
  • Large handful fresh basil
  • 120ml double cream
  • 1 tsp sugar
  • 3 tbsp olive oil
  • Salt and pepper

Instructions

    If using fresh tomatoes, roast cut-side up with olive oil at 200°C for 25 minutes.

    Heat oil and sauté onion for 6 minutes.
