Ingredients
- 1.2 kg ripe tomatoes, halved (or 2 cans 800g whole tomatoes)
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 tbsp tomato paste
- 500ml vegetable stock
- Large handful fresh basil
- 120ml double cream
- 1 tsp sugar
- 3 tbsp olive oil
- Salt and pepper

Instructions

If using fresh tomatoes, roast cut-side up with olive oil at 200°C for 25 minutes.
