Ingredients

  • 1.2 litres chicken or vegetable stock
  • 300g raw shrimp, peeled
  • 200g mushrooms, halved
  • 2 stalks lemongrass, bruised and cut into pieces
  • 5 slices galangal or ginger
  • 5 kaffir lime leaves, torn
  • 3 Thai chillies, smashed
  • 3 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tbsp sugar
  • 2 tomatoes, quartered
  • Fresh cilantro to serve

Instructions

    Bring stock to a boil with lemongrass, galangal and lime leaves.
