Hot and sour Thai soup with shrimp, lemongrass, galangal and lime.

Ingredients
- 1.2 litres chicken or vegetable stock
- 300g raw shrimp, peeled
- 200g mushrooms, halved
- 2 stalks lemongrass, bruised and cut into pieces
- 5 slices galangal or ginger
- 5 kaffir lime leaves, torn
- 3 Thai chillies, smashed
- 3 tbsp fish sauce
- 2 tbsp lime juice
- 1 tbsp sugar
- 2 tomatoes, quartered
- Fresh cilantro to serve

Bring stock to a boil with lemongrass, galangal and lime leaves.
