Ingredients

  • 4 eggs
  • 100g sugar
  • 500g mascarpone cheese
  • 300g savoiardi (ladyfinger) biscuits
  • 2 cups strong coffee, cooled to room temperature
  • Cocoa powder for dusting

Instructions

    Separate the egg whites from the yolks

    Beat the egg yolks with sugar in a bowl until pale and creamy

    Spread a thin layer of cream on the bottom of a baking dish

    Quickly dip ladyfingers in coffee and arrange in a single layer over the cream

    Spread half of the remaining cream over the ladyfingers

    Add another layer of coffee-soaked ladyfingers perpendicular to the first layer

    Spread the remaining cream on top to finish

    Dust generously with cocoa powder

    Refrigerate for at least 3 hours before serving
