Ingredients

  • 700g pork shoulder, thinly sliced
  • 3 dried guajillo chillies
  • 2 dried ancho chillies
  • 1 chipotle in adobo
  • 200ml pineapple juice
  • 60ml white vinegar
  • 4 cloves garlic
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 small pineapple, sliced
  • 16 small corn tortillas
  • 1 white onion, finely chopped
  • Cilantro, chopped
  • Lime wedges

Instructions

    Toast dried chillies in a dry pan for 30 seconds, then soak in hot water for 15 minutes.

    Marinate pork in the sauce for at least 4 hours, ideally overnight.
