Ingredients
- 700g pork shoulder, thinly sliced
- 3 dried guajillo chillies
- 2 dried ancho chillies
- 1 chipotle in adobo
- 200ml pineapple juice
- 60ml white vinegar
- 4 cloves garlic
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1 tsp salt
- 1 small pineapple, sliced
- 16 small corn tortillas
- 1 white onion, finely chopped
- Cilantro, chopped
- Lime wedges

Toast dried chillies in a dry pan for 30 seconds, then soak in hot water for 15 minutes.
