Ingredients

  • 60g fine bulgur wheat
  • Large bunch flat parsley, finely chopped
  • Small bunch mint, finely chopped
  • 4 ripe tomatoes, finely diced
  • 4 spring onions, finely sliced
  • 60ml extra virgin olive oil
  • 60ml lemon juice
  • Salt and pepper

    Soak bulgur in 120ml hot water for 15 minutes until tender, drain any excess.
