- 60g fine bulgur wheat
- Large bunch flat parsley, finely chopped
- Small bunch mint, finely chopped
- 4 ripe tomatoes, finely diced
- 4 spring onions, finely sliced
- 60ml extra virgin olive oil
- 60ml lemon juice
- Salt and pepper
