Ingredients

  • 4 large bell peppers
  • 200g long grain rice
  • 1 onion, finely diced
  • 3 cloves garlic, minced
  • 400g canned chopped tomatoes
  • 100g feta, crumbled (optional)
  • Small bunch parsley, chopped
  • Small bunch dill, chopped
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 3 tbsp olive oil
  • Salt and pepper
  • 100ml vegetable stock

Instructions

    Cook rice in salted water for 10 minutes (parboiled), drain.

    Slice tops off peppers and remove seeds.

    Sauté onion in olive oil for 5 minutes, add garlic for 1 minute.

    Stir in half the tomatoes, oregano, paprika, herbs and rice. Season well.

    Stuff peppers, place in a baking dish.

    Pour remaining tomatoes and stock around the peppers.

    Cover with foil and bake at 190°C for 30 minutes.
