Ingredients

  • 300g plain flour
  • 60ml vegetable oil plus more for frying
  • 120ml water
  • 1 tsp salt
  • 500g potatoes, boiled and mashed roughly
  • 150g peas
  • 1 onion, finely chopped
  • 2 green chillies, minced
  • 1 tbsp ginger, grated
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • 1 tsp coriander powder
  • 1/2 tsp chilli powder
  • 1 tbsp lemon juice
  • Cilantro, chopped

Instructions

    Make dough by mixing flour, salt, oil and water into a stiff dough, rest 30 minutes.

    Heat 1 tbsp oil and sauté onion, ginger, chillies for 3 minutes.

    Add spices, peas, then mashed potatoes, mix thoroughly and cook 4 minutes.

    Stir in lemon juice and cilantro, cool the filling.

    Divide dough into 6 balls, roll each into an oval and cut in half.

    Form each half into a cone, fill with potato mix, seal with water.

    Heat oil to 160°C and fry samosas in batches for 8 minutes until golden and crisp.

    Drain on paper towels and serve with chutney.
