Ingredients

  • 3 1/2 lbs tomatoes
  • 1 1/2 lbs eggplant
  • 1 lb zucchini
  • 3 bell peppers
  • 2 lbs onions
  • 6 cloves garlic
  • 2 teaspoons herbes de Provence
  • Fresh basil, thyme, and parsley
  • Olive oil
  • 140g tomato paste (optional)
  • Salt and pepper to taste

    Blanch tomatoes in boiling water until skins split
