Ingredients
- 3 1/2 lbs tomatoes
- 1 1/2 lbs eggplant
- 1 lb zucchini
- 3 bell peppers
- 2 lbs onions
- 6 cloves garlic
- 2 teaspoons herbes de Provence
- Fresh basil, thyme, and parsley
- Olive oil
- 140g tomato paste (optional)
- Salt and pepper to taste
