French savoury tart with bacon, eggs, cream and Gruyère in a buttery crust.

Ingredients
- 200g plain flour
- 100g cold butter, cubed
- 1 egg yolk
- 3 tbsp ice water
- 1 tsp salt
- 200g bacon lardons
- 1 small onion, sliced
- 150g Gruyère, grated
- 4 eggs
- 300ml double cream
- Pinch of nutmeg
- Salt and white pepper

Pulse flour, salt and butter to fine crumbs, add yolk and water until dough comes together.

Wrap and chill the dough for 30 minutes.

Bake at 180°C for 25 minutes until just set with a slight wobble.
