Ingredients

  • 200g plain flour
  • 100g cold butter, cubed
  • 1 egg yolk
  • 3 tbsp ice water
  • 1 tsp salt
  • 200g bacon lardons
  • 1 small onion, sliced
  • 150g Gruyère, grated
  • 4 eggs
  • 300ml double cream
  • Pinch of nutmeg
  • Salt and white pepper

Instructions

    Pulse flour, salt and butter to fine crumbs, add yolk and water until dough comes together.

    Wrap and chill the dough for 30 minutes.

    Roll out and line a 23 cm tart tin, prick base with a fork.

    Blind bake at 190°C for 15 minutes with weights, then 5 minutes without.

    Cook bacon and onion together in a dry pan until lightly browned.

    Whisk eggs, cream, nutmeg, salt and pepper.

    Spread bacon and Gruyère in the crust, pour over the custard.

    Bake at 180°C for 25 minutes until just set with a slight wobble.
