Ingredients

  • 1.2 kg pumpkin or butternut squash, peeled and cubed
  • 1 onion, chopped
  • 4 cloves garlic
  • 2 cm ginger, sliced
  • 800ml vegetable stock
  • 120ml double cream
  • 1/2 tsp ground cumin
  • 1/2 tsp ground nutmeg
  • 3 tbsp olive oil
  • Salt and pepper
  • Pumpkin seeds and chives to serve

Instructions

    Toss pumpkin with olive oil and salt, roast at 200°C for 30 minutes.
