Ingredients
- 1.2 kg pumpkin or butternut squash, peeled and cubed
- 1 onion, chopped
- 4 cloves garlic
- 2 cm ginger, sliced
- 800ml vegetable stock
- 120ml double cream
- 1/2 tsp ground cumin
- 1/2 tsp ground nutmeg
- 3 tbsp olive oil
- Salt and pepper
- Pumpkin seeds and chives to serve

Toss pumpkin with olive oil and salt, roast at 200°C for 30 minutes.
