Ingredients

  • 1.5 kg beef bones
  • 300g beef brisket
  • 200g raw beef sirloin, very thinly sliced
  • 1 large onion, halved
  • 5 cm piece of ginger, halved
  • 3 star anise
  • 1 cinnamon stick
  • 4 cloves
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 400g rice noodles (banh pho)
  • Fresh basil, cilantro, mint
  • 1 lime, cut in wedges
  • 2 chillies, sliced
  • Bean sprouts for serving

Instructions

    Char the onion and ginger directly over a flame or under a hot grill until blackened.

    Boil the bones in water for 5 minutes, drain and rinse.

    Return bones to a clean pot with 4 litres fresh water, brisket, charred onion, ginger and spices.

    Simmer uncovered for 2.5 hours, skimming foam often.

    Strain the broth, return to the pot and season with fish sauce and sugar.

    Cook the noodles per package, divide into bowls.

    Serve with herbs, lime, chillies and bean sprouts on the side.
