Ingredients
- 1.5 kg beef bones
- 300g beef brisket
- 200g raw beef sirloin, very thinly sliced
- 1 large onion, halved
- 5 cm piece of ginger, halved
- 3 star anise
- 1 cinnamon stick
- 4 cloves
- 2 tbsp fish sauce
- 1 tbsp sugar
- 400g rice noodles (banh pho)
- Fresh basil, cilantro, mint
- 1 lime, cut in wedges
- 2 chillies, sliced
- Bean sprouts for serving

Instructions

Char the onion and ginger directly over a flame or under a hot grill until blackened.

Strain the broth, return to the pot and season with fish sauce and sugar.

Cook the noodles per package, divide into bowls.
