Ingredients

  • 500ml double cream
  • 200ml whole milk
  • 100g sugar
  • 1 vanilla bean or 1 tbsp vanilla extract
  • 3 sheets gelatin (or 1 tbsp powdered)
  • 300g mixed berries
  • 2 tbsp sugar for berries
  • 1 tbsp lemon juice

Instructions

    Soak gelatin sheets in cold water for 5 minutes (or bloom powdered in 3 tbsp water).

    Heat cream, milk, sugar and vanilla just to a simmer, then remove from heat.

    Squeeze gelatin and stir into hot cream until dissolved.

    Strain into 6 glasses or molds.

    Chill at least 4 hours until set.

    Toss berries with sugar and lemon juice, rest 15 minutes.
