Ingredients
- 200g flat rice noodles
- 200g raw shrimp, peeled
- 2 eggs, beaten
- 150g firm tofu, cubed
- 100g bean sprouts
- 3 spring onions, sliced
- 3 tbsp tamarind paste
- 3 tbsp fish sauce
- 2 tbsp palm or brown sugar
- 3 cloves garlic, minced
- 3 tbsp roasted peanuts, chopped
- 1 lime, cut into wedges
- 2 tbsp vegetable oil

Soak the rice noodles in warm water for 20 minutes until pliable, then drain.

Whisk tamarind paste, fish sauce and sugar into a smooth sauce.

Heat oil in a wok over high heat and stir-fry the garlic and tofu for 2 minutes.
