Ingredients
- 400g Arborio or risotto rice
- 300g button or cremini mushrooms, sliced
- 1 shallot, finely minced
- 4 cloves garlic, minced
- 1/2 cup white wine
- 4-5 cups mushroom or chicken stock, warmed
- 3 tablespoons butter, divided
- 1/2 cup grated Pecorino or Parmesan cheese
- Olive oil
- Salt and pepper to taste

Heat olive oil in a wide skillet or pot over medium-high heat

Sauté shallot and garlic until fragrant
