Ingredients

  • 400g Arborio or risotto rice
  • 300g button or cremini mushrooms, sliced
  • 1 shallot, finely minced
  • 4 cloves garlic, minced
  • 1/2 cup white wine
  • 4-5 cups mushroom or chicken stock, warmed
  • 3 tablespoons butter, divided
  • 1/2 cup grated Pecorino or Parmesan cheese
  • Olive oil
  • Salt and pepper to taste

Instructions

    Heat olive oil in a wide skillet or pot over medium-high heat

    Sauté shallot and garlic until fragrant
