Ingredients

  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery sticks, diced
  • 1 zucchini, diced
  • 200g green beans, chopped
  • 4 cloves garlic, minced
  • 400g canned chopped tomatoes
  • 400g canned cannellini beans, drained
  • 1.5 litres vegetable stock
  • 150g small pasta (ditalini)
  • Parmesan rind (optional)
  • 1 tsp dried oregano
  • Handful spinach
  • Parmesan and basil to serve
  • 3 tbsp olive oil

Instructions

    Heat olive oil and sauté onion, carrot and celery for 8 minutes.
