Ingredients
- 400g elbow macaroni
- 60g butter
- 60g plain flour
- 700ml whole milk
- 350g sharp cheddar, grated
- 100g Gruyère, grated
- 1 tsp Dijon mustard
- Pinch of nutmeg
- Pinch of cayenne
- 60g panko breadcrumbs
- 30g butter for crumbs
- Salt and pepper

Boil macaroni 2 minutes shy of al dente, drain and set aside.

Melt 60g butter, whisk in flour and cook for 1 minute.
