Ingredients

  • 400g elbow macaroni
  • 60g butter
  • 60g plain flour
  • 700ml whole milk
  • 350g sharp cheddar, grated
  • 100g Gruyère, grated
  • 1 tsp Dijon mustard
  • Pinch of nutmeg
  • Pinch of cayenne
  • 60g panko breadcrumbs
  • 30g butter for crumbs
  • Salt and pepper

    Boil macaroni 2 minutes shy of al dente, drain and set aside.

    Melt 60g butter, whisk in flour and cook for 1 minute.

    Slowly whisk in milk, simmering until thickened, about 5 minutes.

    Off heat, stir in cheeses, mustard, nutmeg and cayenne until smooth.

    Toss sauce with macaroni, transfer to a buttered baking dish.

    Toss panko with melted butter and scatter on top.
