Ingredients

  • 230g plain flour
  • 60g icing sugar plus more for dusting
  • 200g butter, soft
  • 1/2 tsp salt
  • 300g sugar
  • 30g flour
  • 4 large eggs
  • 180ml lemon juice
  • 2 tbsp lemon zest

Instructions

    Mix flour, icing sugar, salt and butter into a crumbly dough.

    Press into a parchment-lined 23 cm square tin.

    Bake at 175°C for 20 minutes until pale gold.
