Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/2 teaspoon baking soda
- 1/2 cup tahini
- 1/4 cup fresh lemon juice (about 2 lemons)
- 2 cloves garlic, roughly chopped
- 1/4 teaspoon ground cumin
- 1/4 teaspoon za'atar (optional)
- 1 tablespoon olive oil, plus more for serving
- 1/4 teaspoon salt
- Fresh parsley for garnish

Place chickpeas in a pot with baking soda and cover with water by a few inches

Bring to a boil and cook until skins fall off and beans are very soft

With processor running, slowly drizzle in 2 tablespoons ice-cold water until mixture lightens

Drizzle in olive oil while processing until completely smooth
