Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 teaspoon baking soda
  • 1/2 cup tahini
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 2 cloves garlic, roughly chopped
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon za'atar (optional)
  • 1 tablespoon olive oil, plus more for serving
  • 1/4 teaspoon salt
  • Fresh parsley for garnish

    Place chickpeas in a pot with baking soda and cover with water by a few inches

    Bring to a boil and cook until skins fall off and beans are very soft

    Add tahini to the food processor and blend until creamy

    With processor running, slowly drizzle in 2 tablespoons ice-cold water until mixture lightens

    Add the chickpeas, cumin, za'atar, and salt, then process on high

    Drizzle in olive oil while processing until completely smooth
