Ingredients

  • 400g rolled oats
  • 150g mixed nuts (almonds, pecans, walnuts), chopped
  • 60g pumpkin seeds
  • 60g sunflower seeds
  • 60g shredded coconut
  • 120ml honey or maple syrup
  • 80ml coconut or vegetable oil
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 150g dried fruit (raisins, cranberries, chopped apricots)

Instructions

    Heat oven to 150°C and line a large tray with parchment.

    Mix oats, nuts, seeds and coconut.

    Warm honey and oil with vanilla, cinnamon and salt.

    Pour over the oat mix and toss until evenly coated.

    Spread thinly on the tray and press down lightly.

    Bake for 30-35 minutes, stirring every 10 minutes, until golden.
