Ingredients
- 300g dried chickpeas, soaked overnight
- 1 onion, chopped
- 5 cloves garlic
- Large bunch parsley
- Large bunch cilantro
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp baking powder
- 1 tsp salt
- 1/2 tsp chilli flakes
- 2 tbsp flour
- Vegetable oil for frying

Drain the soaked chickpeas thoroughly. Do not use canned.

Pulse chickpeas, onion, garlic and herbs in a food processor to a coarse paste.

Add spices, salt, baking powder and flour, pulse briefly to combine.

Chill the mixture for 30 minutes.

Form into small balls or patties.

Heat oil to 170°C and fry falafel in batches for 4 minutes until deep brown.
