Ingredients

  • 4 English muffins, split
  • 8 slices Canadian bacon or ham
  • 8 large eggs
  • 1 tbsp white vinegar
  • 3 egg yolks
  • 1 tbsp lemon juice
  • 180g butter, melted and warm
  • Pinch of cayenne
  • Salt to taste
  • Chives, chopped

    Whisk yolks with lemon juice and 1 tbsp water in a bowl over barely simmering water until pale and thick, about 3 minutes.

    Slowly drizzle warm butter into the yolks, whisking constantly until thick. Season with salt and cayenne.

    Toast muffins and warm ham in a dry pan.

    Bring water and vinegar to a bare simmer, swirl and slip eggs in one at a time. Poach 3 minutes.
