Ingredients

  • 400g dried black beans, soaked overnight
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 6 cloves garlic, minced
  • 2 bay leaves
  • 2 tsp ground cumin
  • 1 tsp dried oregano
  • 2 tbsp white vinegar
  • 1 tbsp sugar
  • 60ml olive oil
  • Salt to taste
  • Cilantro to serve

Instructions

    Drain and rinse soaked beans, cover with fresh water by 5 cm and add bay leaves.

    Simmer beans for 60 minutes until tender, topping up water as needed.

    Heat olive oil and sauté pepper and onion for 8 minutes.
