Ingredients
- 400g dried black beans, soaked overnight
- 1 green bell pepper, diced
- 1 onion, diced
- 6 cloves garlic, minced
- 2 bay leaves
- 2 tsp ground cumin
- 1 tsp dried oregano
- 2 tbsp white vinegar
- 1 tbsp sugar
- 60ml olive oil
- Salt to taste
- Cilantro to serve

Drain and rinse soaked beans, cover with fresh water by 5 cm and add bay leaves.

Simmer beans for 60 minutes until tender, topping up water as needed.
