Ingredients

  • 500ml double cream
  • 1 vanilla bean, split
  • 6 egg yolks
  • 100g sugar plus more for the top
  • Pinch of salt

    Heat cream with vanilla seeds and pod just to a simmer, then steep 15 minutes.

    Whisk yolks, sugar and salt until pale.

    Slowly stream warm cream into yolks, whisking. Strain through a sieve.

    Pour into 6 ramekins set in a roasting tray.

    Pour boiling water around the ramekins to come halfway up the side.

    Bake at 150°C for 35 minutes until just set with a wobble.

    Cool and chill at least 4 hours.
