Ingredients

  • 300g digestive biscuits
  • 120g butter, melted
  • 900g cream cheese, room temperature
  • 240g sugar
  • 4 large eggs
  • 240ml sour cream
  • 1 tbsp vanilla extract
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tbsp cornstarch

    Crush biscuits and mix with melted butter, press into a 23 cm springform tin.

    Bake the base at 175°C for 10 minutes, cool.

    Beat cream cheese with sugar until smooth, scraping the bowl.

    Add eggs one at a time, then sour cream, vanilla, lemon and cornstarch.

    Pour over the cooled base. Wrap the tin in foil and place in a roasting tray.

    Pour boiling water into the tray to come 2 cm up the side.

    Bake at 160°C for 65 minutes until just set with a slight wobble.
