Ingredients

  • 4 chicken breasts
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 1/2 cups bread crumbs
  • 1 cup grated Parmesan cheese, divided
  • 2 cups marinara sauce
  • 200g mozzarella cheese, shredded
  • Olive oil for frying
  • Butter for frying
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

    Slice chicken breasts horizontally to create thin cutlets

    Pound cutlets with a meat mallet until uniformly thin

    Set up breading station: flour with pepper in one bowl, beaten eggs in second, breadcrumbs mixed with half the Parmesan in third

    Season chicken with salt and coat each piece in flour, then egg, then breadcrumb mixture

    Heat olive oil in a pan just below smoking point

    Fry breaded cutlets, adding butter during cooking to keep oil from evaporating
