Ingredients

  • 2 cans (800g) chickpeas, drained
  • 2 onions, finely chopped
  • 3 tomatoes, blended
  • 4 cloves garlic, minced
  • 2 cm ginger, grated
  • 2 green chillies, slit
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp turmeric
  • 1 tbsp chana masala powder
  • 1 tsp garam masala
  • 3 tbsp oil
  • Fresh cilantro to serve
  • 1 lemon, in wedges

Instructions

    Heat oil in a deep pan and sauté onions until deep golden, about 8 minutes.

    Add garlic, ginger and chillies and cook 1 minute.

    Stir in cumin, coriander, turmeric and chana masala, toast 30 seconds.

    Pour in blended tomatoes and cook until oil separates, about 8 minutes.

    Add chickpeas with 200ml water and simmer for 12 minutes.

    Mash a few chickpeas against the side of the pan to thicken.
