Ingredients

  • 300g plain flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 300g sugar
  • 300ml vegetable oil
  • 4 eggs
  • 300g grated carrots
  • 100g walnuts, chopped
  • 300g cream cheese
  • 100g butter, soft
  • 300g icing sugar
  • 1 tsp vanilla

    Preheat oven to 175°C, grease two 23 cm cake tins.

    Whisk flour, baking powder, soda, spices and salt.

    Whisk sugar, oil and eggs until smooth.

    Fold dry into wet, then fold in carrots and walnuts.

    Divide between tins and bake 32 minutes until a skewer comes out clean.
