Ingredients

  • 2 large romaine hearts, chopped
  • 100g parmesan, grated
  • 200g rustic bread, cubed
  • 3 tbsp olive oil
  • 1 egg yolk
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 4 anchovy fillets
  • 2 cloves garlic, minced
  • 120ml vegetable oil
  • Salt and pepper

Instructions

    Toss bread cubes with olive oil and salt, bake at 190°C for 10 minutes until crisp.

    Mash anchovies and garlic to a paste.

    Whisk in egg yolk, lemon juice, mustard and Worcestershire.

    Slowly drizzle in vegetable oil while whisking to emulsify.

    Toss romaine with dressing, top with croutons and remaining parmesan.
