Ingredients

  • 700g chicken thighs, cubed
  • 200g plain yogurt
  • 2 tbsp lemon juice
  • 2 tbsp ginger-garlic paste
  • 2 tsp garam masala
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 1 tsp turmeric
  • 1 tsp chilli powder
  • 400g tomato passata
  • 200ml double cream
  • 60g butter
  • 1 tbsp dried fenugreek leaves
  • 1 tbsp sugar
  • Salt to taste

Instructions

    Mix yogurt, lemon juice, half the ginger-garlic paste and half the spices, marinate chicken for at least 30 minutes.

    Sear marinated chicken in a hot pan for 5 minutes until charred at the edges, set aside.

    Melt butter in a pot, sauté remaining ginger-garlic paste for 1 minute.

    Add remaining spices and toast for 30 seconds, then pour in tomato passata.

    Simmer uncovered for 15 minutes until thickened.

    Stir in cream, sugar, fenugreek and the chicken with its juices.
