Ingredients

  • 1.2 kg chicken wings, split
  • 1 tbsp baking powder (not soda)
  • 1 tsp salt
  • 1 tsp garlic powder
  • 120ml hot sauce (Frank's or similar)
  • 60g unsalted butter
  • 1 tbsp white vinegar
  • 1 tsp Worcestershire
  • Blue cheese dressing and celery to serve

Instructions

    Pat wings completely dry with paper towels.

    Toss wings with baking powder, salt and garlic powder.

    Arrange on a rack over a tray and bake at 230°C for 45 minutes, flipping halfway.
