Ingredients

  • 500g day-old bread, cubed
  • 100g raisins
  • 500ml whole milk
  • 200ml double cream
  • 150g sugar
  • 4 eggs
  • 1 tbsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • Pinch of salt
  • 60g butter, melted
  • 120g sugar for sauce
  • 60g butter for sauce
  • 120ml cream for sauce

Instructions

    Toss bread cubes with raisins in a buttered baking dish.

    Whisk milk, cream, sugar, eggs, vanilla, spices and salt.

    Pour over bread, press down and rest 20 minutes to soak.
