Ingredients

  • 500g dried black beans, soaked overnight
  • 300g smoked pork ribs
  • 300g pork shoulder, cubed
  • 200g chorizo sausage
  • 200g smoked ham hock
  • 200g bacon
  • 2 onions, chopped
  • 8 cloves garlic, minced
  • 3 bay leaves
  • 2 tsp ground cumin
  • Orange slices and cilantro to serve
  • Cooked white rice
  • Sautéed collard greens

Instructions

    Drain beans and cover with fresh water in a large pot, add bay leaves.

    Simmer beans for 45 minutes.
