Ingredients

  • 400g plain flour
  • 100g lard or butter
  • 1 tsp salt
  • 150ml warm water
  • 500g ground beef
  • 2 onions, finely chopped
  • 3 spring onions, sliced
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1/2 tsp chilli flakes
  • 2 hard-boiled eggs, chopped
  • 12 green olives, sliced
  • 1 egg, beaten for wash
  • 2 tbsp olive oil

Instructions

    Rub fat into flour and salt, add water and knead briefly into a smooth dough. Rest 30 minutes.

    Heat olive oil and sauté onion until soft, about 6 minutes.

    Add beef and spices, brown for 8 minutes.

    Stir in spring onions, cool, then fold in egg and olives.

    Roll out dough and cut 12 cm circles.

    Place filling on each circle, fold and crimp edges with a fork.

    Brush with egg wash and bake at 200°C for 22 minutes until golden.
