Ingredients

  • 2 kg pork shoulder, bone-in
  • 2 tbsp brown sugar
  • 2 tbsp paprika
  • 1 tbsp salt
  • 1 tbsp black pepper
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp cayenne
  • 300ml apple juice
  • 300ml BBQ sauce
  • Brioche buns and slaw to serve

Instructions

    Combine brown sugar, paprika, salt, pepper, garlic, onion powder and cayenne for the rub.

    Pat pork dry and coat heavily with the rub.

    Place in a roasting pan, pour apple juice in the bottom, cover with foil.

    Roast at 150°C for 5 hours until probe-tender.

    Rest 30 minutes, then shred with two forks, discarding fat and bone.
