Ingredients
- 350g plain flour
- 1 tsp salt
- 1 tbsp sugar
- 230g cold butter, cubed
- 120ml ice water
- 1 kg tart apples (Bramley or Granny Smith), peeled and sliced
- 150g sugar for filling
- 2 tbsp lemon juice
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 30g cornstarch
- 30g butter, cut in pieces
- 1 egg, beaten for wash
- Coarse sugar for top

Pulse flour, salt, sugar and butter to coarse crumbs, add water to form dough. Chill 1 hour.

Toss apples with sugar, lemon, cinnamon, nutmeg and cornstarch.

Roll out half the dough and line a 23 cm pie dish.

Pile apples in the crust, dot with butter pieces.

Roll the second crust, place over the top, crimp edges and cut steam vents.

Brush with egg wash, sprinkle with coarse sugar.

Bake at 200°C for 20 minutes, then reduce to 180°C for 40 minutes.
